My first time to light a star anise and it was so lit! 🤗

I got a new barrel aged Gin from @fourpillarsgin.  Four Pillars rested the gin in French oak and created a blend using Solera system which is to blend from different barrels of varying ages.  I have seen similar techniques for balsamic vinegar in Modena Italy. Four Pillars uses their famous Rare Dry Gin, slightly higher proof then adjusts each botanical subtly. Each release is different the one I bought is Solera no 5 released last year.  No 6th is already a sold out. .
When I first sipped it, it caught me by surprise because it is so different from the classic crisp and sharp Gin that I am used to.  It is full of aroma on the nose, oaky,  hint of ginger, anise, cassia followed by citrus and juniper. It is well balanced. 
My first experiment turned out to be old fashioned. I decided to bring out features that are more of whisky and the fall season since I am making old fashioned. .

Pernod Absinthe to do a quick glass rinse
2 oz Four Pillars barrel aged Gin @fourpillarsgin 
1 tsp cinnamon syrup
Generous dashes of smoke and oak bitters from @bettersbitters
Dashes of grapefruit bitters from @betterbitters 
1 star anise
Glassware: limited edition as homage to Charles Schumann. The sexiest bartender alive!

Use the Absinthe to do a quick rinse. Stir all ingredients in a mixing glass not for long, since the gin is lower ABV than a typical whisky. Pour over to the glass with a large clear ice cube. Express grapefruit oil and garnish with the peel.  Light the star anise to release additional aroma. The star anise is soaked in warm Absinthe.

Photography tip: you need to set up everything before lighting the anise. Make sure the ice cube is leveled when placing the anise. Choose the dark background so you can see the flame. I waited til sundown then used my 50mm 1.4 in very low light. I also used continuous mode in my camera so it captures more frames that I get to choose the best.

It turns out to be a drink I enjoyed, you can tell it's an old fashioned but with juniper and citrus finish. That is how I wanted it to be.
