Meat free Monday. This is a y vegetable cake called 'ondwo'. It is made with semolina/rice/chickpea flour, fresh es and this one contains no less than six different vegetables- potatoes/carrots/onions/bottle gourd/spinach/fenugreek. The possibilities are endless, you could even add cabbage or courgette. A great way to feed your family veggies! Before it is baked, it is topped with mustard seeds, and sesame seeds which, after baking form the most delicious dark crust. It is an all rounder and can be eaten for breakfast, lunch, dinner or as a snack or even in a picnic.
